This is our true national food -Sheep Cheese Dumpligs. Everybody visiting Slovakia must try it. The most important ingredient is a special sheep cheese made exclusively in our region called BRYNDZA. The taste of bryndza is hard to achieve by some cheese substitute, but I have heard that Italian cheese Strachino may taste simmilar. The best bryndza comes from sheep eating aromatic grasses and flowers in May.
The meal is quite simple to cook. Small pieces of potato-flour dough are boiled in water, drained and served with bryndza and roasted bacon pieces. It taste great with sour milk called zincica. Here is a recipe in English.
The only thing I do not like about this meal is a bowl dirty from a sticky dough... :)
